Chia Pudding Made Easy

Chia pudding is my go-to dessert because it’s incredibly healthy AND delicious. Most people, even with allergies can tolerate them well. They are gluten free, grain free, Paleo, and Keto-friendly. There are 101 ways to make chia pudding (maybe more) but today I want to share a few of my favorite combinations and how you can get super creative with your own pudding concoctions.

First, a little background on chia seeds. Historically, it was prized more highly than gold to the Mayan people and known for giving strength and endurance. According to Wikipedia: "Chia is the edible seed of Salvia hispanica, a flowering plant in the mint family native to Central America, or of the related Salvia columbariae of the southwestern United States and Mexico. Chia seeds are oval and gray with black and white spots, having a diameter around 1 millimetre. The seeds are hydrophilic, absorbing up to 12 times their weight in liquid when soaked and developing a mucilaginous coating that gives chia-based creams and beverages a distinctive gel texture."

The hydrophilic property not only makes them versatile in making desserts but also makes them a powerful addition to hydration. In fact, the Tarahumara people, a northwest Mexican tribe of super athletes drank a combination of chia seeds, water, and lemon juice before running hundreds of miles throughout their region.

Health Benefits of Chia Seeds

Besides helping with hydration, they are also used as a help in weight loss and are a great source of:

  • Omega 3 fatty acids (more absorbable to the body than flaxseed)

  • protein- about 4 grams per 2 tablespoons

  • carbohydrates

  • fiber (they also help with constipation when mixed with water)

  • antioxidants

  • calcium

Add them to smoothies, hot cereals, and dissolve them in drinks for added health benefits. My most favorite way to enjoy them is with chia pudding and there are so many ways and variations that I wanted to show you some of the basics.

The Basics of Chia Pudding

Once you’ve got the basic principles of chia pudding down you’ll be able to create any combination of flavors you can imagine.

3 Tablespoons of chia seeds to 1 Cup of liquid

From there the options are endless! Just make sure to mix each combination up thoroughly so the chia seeds are evenly distributed and any powders dissolve completely. Try these and feel free to experiment with your own favorite flavor combos.

Here are some of my favorite combos (each makes 1 serving)

  • Tropical Rain - 3 Tablespoons chia seeds + ½ Cup guava juice + ½ Cup coconut milk

  • Razzies and Cream - 3 Tablespoons chia seeds + ½ Cup raspberry puree + ½ Cup almond milk

  • Orange Creamsicle - 3 Tablespoons chia seeds + ¾ Cup orange juice + ¼ Cup coconut cream

  • Strawberry Basil - 3 Tablespoons chia seeds + 1 Cup strawberry puree + 5 basil leaves, finely chopped

  • Energy Gel - 3 Tablespoons chia seeds + 1 Tablespoon lemon juice + 1 Tablespoon lime juice + ¾ Cup water + 3 drops stevia

  • Chocolate Dream - 3 Tablespoons chia seeds + 1 Cup almond milk + 1 Tablespoon cacao powder + 3-5 drops stevia

  • Spirulina Mint - 3 Tablespoons chia seeds + 1 Cup cashew milk + 10 mint leaves, finely chopped + 1 teaspoon spirulina powder + 3-5 drops stevia

Stir Briskly or add all ingredients to your blender and process until super smooth and enjoy!
